The goal of any restaurant kitchen ventilation system is to remove heat, grease, and other vapors generated within the kitchen so that it can operate safely and efficiently. A kitchen hood system includes several key components to ensure that smoke, steam, heat, grease, and other food-related vapors are captured. The exhaust or vent fan is the heart of any restaurant kitchen ventilation system; it pulls all of the heat, grease, and other culinary vapors into the ductwork and up away from the structure via exhaust fans.

A kitchen vent hood is a box-shaped device with one or more fans that hangs over the heating element in your restaurant and captures all of the heat and grease right away. To prevent grease from entering your ventilation system’s ductwork, baffle filters are placed within your restaurant vent hood to filter as much grease as possible. The type of stove, oven, or grill you use in your kitchen will determine whether you need a blanket filter or not.

The smoke, heat, and grease that escapes past the baffle filter into your system’s ductwork is referred to as “backstreaming.” It will eventually reach the kitchen vent fan after entering the ductwork. It will then travel to the kitchen vent fan and out of the building via your facility’s ductwork. A restaurant hood/ventilation system may be made up of one vent hood plus one exhaust fan or multiple restaurant vent hoods with fans connected via a network of numerous ducts. The number of heating elements you have, as well as the size of your kitchen, will determine which type of ventilation system is right for you.

The exhaust fan should be included with a hinged top cover that can be opened from the top. It is critical to be able to clean your kitchen ventilation fan and ductwork from the bottom up in order to remove any residual oil that may accumulate in the ductwork system.This will prevent the potential for house fires and safeguard your kitchen’s construction. To minimize grease residue, top of the line baffle filters are advised, but even with the best baffle filters, some residue is unavoidable, and the system must be cleaned.

Another crucial component of any restaurant kitchen ventilation system is a make-up air unit. The exhaust fan is also sucking out fresh, clean air from your kitchen that must be replaced. The make-up air unit circulates fresh, clean air through your kitchen in order to “make up” for the air being sucked out by the fan.

 Types of hoods

There are three types of commercial hoods: wall-mounted, island, and under-cabinet. Wall-mounted hoods are the most popular type used in restaurants. They are mounted on the wall behind the range and have a fan that pulls air through the filters and vents it outside. Island hoods are similar to wall-mounted hoods, but they are suspended from the ceiling over an island workstation. Under-cabinet hoods are installed beneath a cabinet or shelf and have a fan that pulls air through the filters and vents it outside.

The size of your commercial hood is determined by the size of your range and the amount of heat and grease produced during cooking. The width of your hood should be at least as wide as your range, and the height should be 12 to 18 inches taller than the tallest burner on your range.

 Average cost

Installing a commercial hood costs between $960 and $1,200 per square foot. Commercial hoods are usually 10 to 14 feet long, which translates to installation costs of around $9600 on the lower end and $16,800 on the higher end. The pricing may vary based on size, material, labor, and location; so if you’re planning on installing a high-end commercial range hood for your kitchen, you could spend considerably more than the amount shown above.

The following are some of the additional expenses to consider: Building permits for installation. Structural reinforcements to help your floor or wall support the weight of your new hood. Higher-end materials, such as copper or stainless steel, may be used. There may be a requirement for a large number of ducts to install at a certain location.
